This 28-year-old block of cheddar was in one of three boxes of unintentionally aged cheddar recently discovered in a Milwaukee cheese market. The three boxes -- 28, 34 and 40 years old -- will be auctioned to the public.

40-year-old cheese sampling

MILWAUKEE (AP) - Wisconsin cheese lovers get to sample possibly some of the oldest cheese ever sold to the public.

The Wisconsin Cheese Mart in Milwaukee is selling 34- and 40-year-old cheddar on Saturday during a cheese tasting event.

Store owner Ken McNulty bought it from Z's Cheese Shoppe in Oconto. The owner, Edward Zahn, found the cheese in a walk-in cooler this summer. He says it had been overlooked so it was aged unintentionally.

McNulty bought about 20 pounds of the 40-year-old cheddar and 120 pounds of 34-year cheddar. He plans to sell it by the ounce, instead of by the pound, so more people can taste it. It will be $10 an ounce.

He says the outside pieces are crunchy because of crystallization and the inside is creamier and overwhelmingly sharp.
